Easy Chicken Spaghetti and Lemon Lime cookies



Happy Tuesday!!

This meal was inspired by my laziness to cook and my husband begging me for weeks for lemon cookies. Enjoy!


Easy Chicken Spaghetti

3 Chicken breast
2 cups  Pasta sauce
1/4 -1/2 cup  Cheese (I used Cheddar)
1/2 - 1 box of Vermicelli Spaghetti noodles (I used Catelli smart pasta)
1 cup Mushrooms sliced
1/2 cup chopped Green onions
1 tbsp Olive oil
1 tsp Basil
1 tsp Oregano
Garlic Salt & Pepper to taste

Preheat your oven to 375ºf. Spray a glass 8 x 8 baking dish with cooking spray for easy clean up. Put Chicken Breast into the baking dish and sprinkle with garlic salt and pepper, pour the Spaghetti sauce over the chicken breast. Bake for 25 - 30 minutes.

Start cooking your pasta now as directed on the box.

Meanwhile add Olive oil, Green onions, Mushrooms, Garlic salt, basil & Oregano and sprinkle with salt and pepper in a frying pan. Sauté over medium heat till mushrooms get to a golden brown.

Layer the plate, Spaghetti first then spoon sauce over and add the Mushroom and onions and the Chicken on top. Sprinkle with desired amount of Cheese.



Lemon Lime Cookies
2 3/4 cups Whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 tsp vanilla extract
Zest of one lemon, finely minced
Zest of one lime, finely minced
3 tbsp fresh lemon juice
2 tbsp fresh lime juice
1/2 cup sugar for rolling cookies

Preheat oven to 350ºf. Line cookie sheets with parchment paper.In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
 beat together the butter and sugar until smooth and very fluffy. Beat in egg, vanilla extract, lemon juice and lemon zest.Gradually blend in the dry ingredients.
Roll rounded teaspoonful's of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
Let stand on cookie sheet two minutes before removing to cool on wire racks.

Chicken fajitas- Taco salad- Brownies


So this one is actually from Thursday lol but I thought we needed some content so here you go :)
Thursday  Dinner: CHICKEN FAJITAS- TACO SALAD- BROWNIE & ICE CREAM


CHICKEN FAJITAS

2-3 Chicken breast (cut into strips)
1 Packet of fajitas seasoning (use as directed on package)
1 med onion
1 Large pepper
Corn flour tortillas ( Las tortillas corn tortillas are the best!)

Slice onions & peppers into thin slices and set aside. Brown chicken strips with about 2 tablespoons of olive oil then add your onions & peppers to the chicken and mix. Now add your fajitas seasoning packet and do as directed on the packet. You will have to add water with the seasoning then mix it all up well and let it sit for about 5 min. Take your corn flour tortillas and add about 2 large table spoons of the mixture to the middle of tortilla. Bend in half and enjoy! Makes about 12-15 Fajitas.

TACO SALAD

1 Pound of ground beef (or ground chicken)
1 Packet of taco seasoning (use as directed on package)
1 Head of lettuce
3 Green onions
2-3 cups of Salsa
1-2 cups of medium cheese
1 cup of sour cream
Taco chips

Chop up lettuce and green onions set aside in Xtra large bowl. Cook meat thoroughly and add taco seasoning do as directed on packet-usually it makes you add 1 cup of water to it then let it simmer to soak up the seasoning. Now back to your bowl of lettuce- Add your salsa, cheese and sour cream. Add cooked ground beef. Fold in all the ingredients. Serve with taco chips. Or you can also crush the chips on top of the salad and fold in also.Serves 5-7 people

Brownie & Ice cream

1/2 Cup butter
1    Cup sugar
2    Eggs
1    Tsp vanilla
2/3 Cup of Cocoa
1/2 Cup flour
1/2 Tsp baking powder
1/2 Tsp salt

Preheat oven to 350º. Grease a 8x8 pan set aside. Melt butter in a pot than take off burner and add sugar. Let sit till it is no longer hot. Add 2 eggs mix well. Add vanilla & cocoa and mix well. Add flour, baking powder and salt mix well. Add mixture to the 8x8 pan and bake for 30-35 minutes. Let sit for about 15 min cut into squares serving warm. Add large scoop of ice cream on top and chocolate syrup if desired! Great finish to a yummy supper! Serves 8-10 people.

I will start by introducing my sisters Lisa, Candace and myself well I'm Jen. One day I was chatting with one of my sisters about what to make for dinner. I'm always stumped on this one - yes of course I can go on line and find any recipe in the world and 100 of them at that. But let's face it some taste buds are pickier than others and generally we follow the same loving flavors as most of our fellow family members. I asked what is was she was making for dinner and she was making something I had never made my family before and it sounded great. A must try - I have to have the recipe! Well here is where the blog comes in :) Here is where we share it all. Hopefully if we can and have the time (we have Lot's of babies) we will be posting our breakfast, lunch or dinner that we had for the day. Some will have the recipes & some are just a general ideas for a meal. We also will share our craft ideas & DIY projects. Pretty much anything that has to do with anything!
